The Problem

When using graphite light as the default theme I end up with hidden text on some of the HA menus.

Set as default theme and then use HA normally

same issue also for chip cards if use "use light color" and the color is "bright.

Same here. Also found using the menu when editing an automation. In dark theme text is black on black background.

@aswormboy, I think this might be a different issue than the original one above. I've opened an upstream ticket for something similar to what you're seeing:
home-assistant/frontend#29172
